Celebrate the holiday season with this impressive and cheerful Festive Mini Goat Cheese Wreath. Goat cheese is mixed with cream cheese and rolled in seasonal ingredients including chopped chives, dried cranberries, pecan pieces, and pistachios. Serves: 24 balls
INGREDIENTS
- 1 300-gram package goat cheese, at room temperature
- 1 250-gram package cream cheese, at room temperature
- ½ cup chives, finely chopped
- ¾ cup dried cranberries, finely chopped
- ¾ cup pecans, finely chopped
- ¾ cup pistachios, finely chopped
- Rosemary sprigs, for garnish (optional)
DIRECTIONS
Place the goat cheese and cream cheese in a mixing bowl. Using a firm silicone spatula, stir the cheeses together until smooth and fully combined.
Finely chop the chives, dried cranberries, pecans, and pistachios. Transfer each ingredient into its own small bowl to create four separate coatings.
Scoop a heaping tablespoon of the cheese mixture and roll it between your hands to form a smooth ball. Roll the ball in one of the bowls of chopped ingredients, using your fingers to gently press the coating onto the surface so it adheres well. Set the finished cheese ball on a plate and repeat with the remaining mixture, alternating coatings as desired.
Once all the cheese balls are prepared, arrange them in a decorative wreath shape on a serving platter. Serve at room temperature with a glass of The Bub and enjoy!
Recipe Notes: The cheese balls can be made and arranged up to one day in advance. Cover the platter tightly with plastic wrap and refrigerate until ready to serve.
